SPINACH PIE | |
1 lb. Ricotta cheese 1 (10 oz.) bag spinach, cleaned, cooked and well drained 1 c. grated Mozzarella cheese 3 eggs, slightly beaten 2 tbsp. oil 1 tbsp. onion salt 1/2 tsp. salt 1/4 tsp. pepper 1/2 zucchini squash, sliced and sauteed 1/4 lb. fresh mushrooms, sliced and sauteed 2 tbsp. butter Mix all ingredients and bake in deep pie dish or quiche dish, well oiled. Bake at 350 degrees for 40 minutes. |
