APPLE CIDER BREAD 
1/4 c. shortening
2/3 c. sugar
2 eggs, well beaten
2 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 c. coarsely chopped apples
1 tbsp. lemon juice
1 tsp. cinnamon
1/2 c. sweet cider
1/2 c. chopped nuts
1/2 c. raisins (optional)

Cream shortening and sugar; add eggs. Sift dry ingredients and add alternately with cider to creamed mixture. Stir in lemon juice, raisins, and nuts.

Fold in apples. Pour into greased loaf pan. Let stand 10 minutes. Bake at 350 degrees for 50-60 minutes. Cool 10 minutes in pan and remove to rack to cool completely.
