GERMAN, APPLE, CHOCOLATE CHIP
BREAD
 
3 eggs
1 c. cooking oil
1/2 c. bottled apple juice
2 tsp. vanilla
3 c. unsifted flour
1 3/4 c. sugar
1 tsp. cinnamon
1 tsp. baking soda
3/4 tsp. salt
3 c. peeled, diced apples
1 c. chocolate chips
3/4 c. nuts (opt.)

Beat eggs slightly in large mixing bowl. Add oil, apple juice, and vanilla. Combine dry ingredients, stir into first mixture until smooth. Add apples and chocolate chips, stir until mixed. Pour into 2 well greased and floured loaf pans. Bake at 350 degrees for 65 minutes (test after 40 minutes). Cool 10 minutes - remove from pans and cool completely. When cool, sprinkle with confectioners' sugar.
