CARROT CHILI PEPPER SALAD 
1 lg. plump carrot, grated
2 stalks celery, finely chopped
3 green onions, chopped
1 green (mild) chili pepper, chopped from a can of whole chili peppers or use the 1/2 can or less of the chopped variety.
1 can pineapple chunks, drained

Mix all together with mayonnaise and serve.
