APPLESAUCE NUT BREAD 
2 c. fruit (mixed candied chopped dates, raisins, maraschino cherries or chopped raw cranberries with 1 c. sugar)
2 c. chopped nuts
4 c. flour
1 c. sugar
4 tsp. baking powder
1/2 tsp. salt
2 1/2 c. applesauce
2 eggs, beaten
1/4 c. vegetable oil
2 tsp. baking soda

Preheat oven to 350 degrees. Line two 9 x 5 inch loaf pans with foil, leaving a 1/2 inch collar around edge and grease bottom and sides of foil. Combine fruit, nuts, and dry ingredients. Stir in applesauce, eggs, oil, until just blended. Bake 55 to 60 minutes and test center of bread. Cool. Wrap in foil to store.
