APPLESAUCE NUT BREAD 
2 c. raisins
2 c. chopped nuts
4 c. sifted flour
1 c. sugar (4 tsp. bulk Sweet 'n Low)
4 tsp. nutmeg
2 tsp. baking soda
1 tsp. cinnamon
2 tsp. salt (can eliminate)
2 1/2 c. chunky applesauce
2 eggs, slightly beaten (use egg substitutes or egg whites)
1 1/4 c. vegetable oil (Hollywood Safflower oil)

Combine raisins and nuts. Sift dry ingredients together over fruit and nuts. Mix. Add applesauce, eggs, oil. Stir until just blended. Grease and flour two 9x5x3 inch loaf pans. Divide batter evenly into pans. Bake in preheated 350 degree oven for 1 hour or until breads test done. Freezes well.
