MASHED POTATOES ITALIAN STYLE 
6 medium potatos
1 large onion
1/4 cup Italian seasoning
1 (8 oz.) pkg. cream cheese
1 tbsp. butter
salt, to taste
2 cups mild shredded cheddar cheese (for sprinkling)

Dice potatoes and onion, put in pot of water covering potatoes.

Add Italian seasoning and boil until potatoes are done.

Drain water (make sure onions stay and some of the seasoning. Best way to do it is use a lid to strain water instead of a strainer).

Beat potatoes and add cream cheese and butter until creamy.

Season with salt and sprinkle cheese on top.

Ready to serve!
