GRANDMA CAROLINE'S SICILIAN
POTATO VEGETABLE DISH
 
Oh my gosh, yum, yum, yum!

1 (16 oz.) pkg. sliced bacon
1 (16 oz.) bag frozen green beans (Grandma used canned but I prefer frozen)
1 (15 oz.) can petite diced tomatoes (Grandma broke up canned stewed tomatoes)
1 (16 oz.) can dark red kidney beans, drained
1 (2 lb.) bag frozen cubed hash browns (Grandma cubed fresh potatoes, but who has time for that?)
1/2 cup (1 stick) butter

Preheat oven to 375°F. Line a 9x12-inch baking pan with bacon strips.

Layer: Frozen potatoes, kidney beans, green beans, diced tomatoes then another layer of bacon.

Cut up a stick of butter and evenly distribute over bacon.

Bake at 375°F for about 50 to 60 minutes.
