ONE DISH HAM 'N POTATOES 
3 tbsp. butter
1/3 c. chopped onion
2 tbsp. flour
1 tsp. salt
1/4 tsp. freshly ground pepper
1/8 tsp. ground red pepper
2 1/2 c. milk
1/4 tsp. Dijon mustard
5 med. potatoes, unpeeled & sliced thin (4 c.)
2 c. (10 oz.) cubed, cooked ham

In 2 quart microwave proof casserole combine butter and onion. Cover and microwave on High 3 to 5 minutes, until onion is translucent. Stir in flour, salt and peppers until smooth. Stir in milk. Microwave on High 8 to 12 minutes, stirring every 3 minutes, until smooth and slightly thickened. Stir in mustard. Layer half the potatoes, then all the ham, in the dish. Top with remaining potatoes, pressing them into the sauces. Cover with heavy duty plastic wrap; pierce for steam vents. Microwave on High 10 minutes; stir. Microwave covered on High 9 to 13 minutes more, until potatoes are tender. Makes 6 servings, 270 calories each.

Since microwave ovens vary in power, you may need to adjust your cooking time.
