VEGETABLE CHEESE SOUP 
1 1/2 c. water
1/2 c. celery, diced
1/2 c. carrot, shredded
1/4 c. onion, chopped
1 tsp. parsley flakes
1/2 tsp. salt
Scant pepper
3 c. peeled and diced potatoes
1 chicken flavor bouillon cube
1 1/2 c. milk
2 tbsp. flour
1/2 lb. Velveeta cheese, cubed

Combine water, celery, carrot, onion, parsley, salt, pepper, potatoes and bouillon cube; simmer for 1/2 hour. Combine milk and flour, shake well and add to thicken slightly. Slowly add the Velveeta. Heat gently until melted. Ham cubes may be added to this for a complete meal.
