MEAT FILLING: 1 lb. ground beef, cooked 1 garlic clove, minced 2-3 tbsp. chili powder 2 tsp. salt 1 tsp. black pepper 1 1/2 c. broth Combine all ingredients and mix well. MUSH: 3 1/2 c. yellow corn meal 1/2 c. flour 1 1/2 c. soft shortening 2 1/2 c. beef stock 1 lb. dry corn husk or parchment Cut off ends of corn husks and cover with cold water while preparing corn meal. Combine meal, flour, salt, shortening and half the stock. Beat hard. (About 5 minutes at high speed of electric mixer.) Dry corn husks on inside and spread with about 1/4 cup corn meal mixture. Add about 1 tablespoon of meat filling and roll lengthwise. If necessary cover with extra husks. Tie ends with string. Stack on end in steamer and steam about 45 minutes, using the rest of the stock and extra water if needed. Makes 24. Chicken can be substituted for beef and chicken broth for beef broth. |
