OLD FASHIONED RAISIN VANILLA COOKIES | |
1 1/2 c. raisins 1 1/2 c. water 1 c. butter, softened 1 1/2 c. sugar 1 tsp. vanilla extract 3 eggs 3 1/2 c. all-purpose flour 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder Additional sugar for rolling. In small saucepan boil raisins and water until all water is absorbed. Remove from heat and cool 30 minutes. Preheat oven to 375 degrees. Grease 2 large cookie sheets; set side. In large mixer bowl cream butter, sugar and vanilla 3 minutes or until light and fluffy. Add eggs one at a time, beating well after each addition. In medium bowl combine dry ingredients. Add gradually and mix well. Add vanilla, fold in raisins. Drop by teaspoonfuls into sugar. Roll into balls. Bake 8 to 10 minutes. Makes 11 dozen. About 45 calories each. |
