OLD-FASHIONED RAISIN VANILLA COOKIES | |
1 1/2 c. raisins 1 1/2 c. water 1 c., butter, softened 1 1/2 c. sugar 3 eggs 1 tsp. vanilla 3 1/2 c. flour 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder Boil raisins and water together until all the water is absorbed. Remove from heat and cool for 30 minutes. Put butter, sugar and vanilla in mixing bowl. Cream together for approximately 3 minutes or until light and fluffy. Add eggs, one at a time, beating well after each addition. Add dry ingredients gradually and mix well. Mix in raisin mixture. Drop by teaspoonsful into sugar. Roll into balls and place on greased baking sheet. Bake at 375 degrees for 8 to 10 minutes or until nicely browned. Makes 6 dozen. Freezes well. |
