CAKE-LIKE MUFFINS | |
1/4 cup butter 1/2 cup sugar 2 eggs 2 1/4 cups flour 4 tsp. baking powder 1 tsp. salt 1 cup milk 1 tsp. vanilla Cream butter and sugar. Add eggs. Beat until creamy. In a small bowl, whisk together flour, baking powder and salt. Stir vanilla into milk. Add flour mixture to eggs alternately with milk mixture and beat until smooth like cake batter (30-45 seconds). Pour into greased or paper-lined muffin cups. Bake at 400°F for 15-20 minutes or til golden and set in center (check with a wooden pick). |
