CHICKEN - HAM - SHRIMP DISH 
6 tbsp. butter
6 tbsp. flour
1 1/2 c. milk
1 tsp. salt
1/4 c. chopped onion
1 1/2 c. chicken broth
1 c. grated sharp cheese
1/2 c. chopped green pepper
3 c. cooked chicken
1 lb. diced cooked ham
1 1/2 lbs. shrimp, cooked
1 (4 oz.) can mushrooms, sliced and drained
2 tbsp. pimento, cut in strips

Melt butter. Saute onion until tender. Stir in flour and salt to make a smooth paste. Add milk and chicken broth; stir until smooth. Cook until medium thickness, stirring constantly. Add cheese; heat and stir until cheese is melted and sauce is smooth. Stir in remaining ingredients and heat to serve. Serve over rice. Serves 12. Freezes well.
