“VANILLA BUTTERCREAM FROSTING” IS IN:

VANILLA BUTTERCREAM FROSTING 
1 (1 lb.) box confectioners' sugar
1/2 cup (1 stick) butter, softened
3 tbsp. milk
2 tsp. vanilla

Beat confectioners' sugar, butter, milk and vanilla with electric mixer at low speed until well blended and smooth. If frosting becomes too thick, beat in additional milk by teaspoonfuls until the frosting is of spreading consistency.

Makes about 2 1/2 cups frosting.

Excellent and very easy recipe. It doesn't use raw eggs which makes it a great choice for a children's birthday cake. Kids should not eat raw eggs, ya know. You might have to add more milk, depending on what type of confectioners sugar you use. Some confectioner's sugar comes with cornstarch or another ingredient added, which makes it stiffer.

Wonderful recipe - the simplest that I've found. I was actually Googling Alton Brown's recipe when this came up in the results. I'll be sure to try this out! Best of all, no raw eggs. I don't really have anything against raw eggs myself, but my parents freak out when they see me eating something with a high raw egg content. :P

A couple of modifications to make this better:
- use a little less sugar(it's way to sugary and it's not thin enough to spread as it stands).
- sift you powdered sugar first, if you are really motivated do it twice for no lumps.
- add 2 tablespoons of meringue powder (it helps with consistency and aids with piping, also helps reduce the sugar you will need). You can buy this at Sur La Table, Williams Sonoma or online at a myriad of sources.

Some people have complained of this being clumpy or runny. My mom made it and it was actually too firm and when she put more milk, it made it runny. However, my consistency was perfect! Also, as far as clumpy, keep it mixing for longer. I use my Kitchenaid...I'm not sure if a hand mixer will work as well.

I've used this recipe twice. The first time I melted the butter in the microwave and got icing. The second time I let the butter soften the slow way and I got the frosting. Both were yummy!

If you're going to quick-soften the butter in your microwave, do it at half-temperature so you don't melt it, otherwise you get the wrong consistency. ;)

This is a great recipe! Simple and delicious. Melt your butter only until it is soft and still holding its shape. I found this was easier to mix with the fork than the hand blender. Nice and fluffy. Add milk one tablespoon at a time for consistency. It is more like icing with fully melted butter and more milk. Thanks!

So simple with everyday ingredients! No eggs, no shortening! I had googled "easy frosting" and this truly is! My 12 year old made it and in less than 5 minutes the cake was done. We did let the butter soften at room temperature for awhile which I think would make a better consistency than microwaving. It is so delicious and not sickening sweet like store bought cake.
