“LEFTOVER MEATLOAF QUICHE” IS IN:

LEFTOVER MEATLOAF QUICHE 
2 cups crumbled leftover meatloaf
1 cup diced Cheddar or sharp Cheddar cheese
2 cups milk
1 cup Bisquick baking mix
4 eggs
1/2 tsp. salt
1/8 tsp. pepper

Preheat oven to 400°F.

Lightly grease a deep dish 10-inch pie plate. Sprinkle crumbled meatloaf and cheese evenly over bottom of plate.

Beat eggs with salt and pepper.

In a medium bowl, pour in the milk, then add in the Bisquick and beat with a whisk until smooth. Add in beaten eggs and whisk again. Pour mixture over ingredients in pie plate.

Bake at 400°F for 35 minutes or until a toothpick inserted into center of quiche comes out clean.

Remove from oven and let cool on a wire rack for 15 minutes.

Slice quiche into wedges and enjoy!

NOTES:

• Can add chopped veggies such as onions, zucchini, or mushrooms.
• Drizzle with hot sauce, creamy chipotle sauce, or ketchup if desired.
