CARROT CASSEROLE 
3/4 c. rice
2 1/2 c. water
2 1/2 c. milk
5 or 6 carrots, grated
1/2 tsp. salt
1 tbsp. dark sugar
2 eggs

TOPPING:

Bread crumbs
butter

Cook rice in water. When done, add milk so it is porridge. Let it cool. Grate carrots, add salt and pepper, stir in eggs one at a time. Add to porridge and put in greased casserole. Put bread crumbs and small pieces of butter on top. Bake 40 minutes at 350 degrees.

This is a traditional Finnish dish and the crumbs should be placed on top to make a "picture".
