EGG YOLK SPONGE CAKE 
12 egg yolks
2 c. sugar
1 c. boiling water
1/2 tsp. salt
4 tsp. baking powder
2 tsp. lemon extract
3 c. sifted flour

Using an electric mixer or hand beater, beat the egg yolks until light and fluffy; add sugar gradually.

While still beating, pour in hot water in a thin stream. Add extract. Add flour that has already been sifted with baking powder and salt; beat thoroughly.

Turn batter into an angel food cake pan.

Bake in a preheated 300-350°F degrees for about 1 hour or until a toothpick inserted in center of cake comes out clean..

WOW! What a great cake! I love that when I make angel food I now have a gfood recipe that I can use the dozen yolks too!! This cake came out smooth, very lemony but not over powered. and moist! I made a simple lemon glaze to put on it and that heightened the lemon just a bit more- mmmm good! Try it- you will be hooked!

I was looking for a easy recipe to use up egg yolks & this one was the first one to pop up. Its delicious. The only thing I changed was adding almond extract instead of lemon...didn't have any. Still very good.

Perfect! Excellent, just what I was looking for. Smooth and moist, really great. If you're reading this and looking for a way to uses your egg yolks, go ahead, you won't regret it. This is the best "remaining egg yolks" recipe ever. Just one thing, it only took me 30 minutes to bake and not 1 hour, so be careful. I also added cocoa powder to half of the batter and made a marble cake, it turned out wonderful. Thanks!

I have been looking for this recipe for a long time. My mother always separated a full dozen eggs and chilled the yolks and the whites, before making both a sponge cake and an angel food cake. I knew there were no whole eggs in her recipe, and more flour than sugar.....and the hot water was added between them. THANK YOU.
