GREEN NOODLES 
2 eggs
1/2 c. cooked spinach
1 tsp. salt
Flour

Chop the spinach very fine. Beat the eggs and salt together lightly and mix with the spinach. Add enough flour to make a stiff dough. Flour a board or table top and turn the dough out on it. Knead it, press the dough over and press again. Repeat this. Roll out into a thin sheet. Let it stand to dry for an hour. Cut into strips about 1/2" wide. Cook as you would bought noodles.
