ITALIAN SAUSAGE AND GREEN BEANS
WITH PASTA
 
1 lb. Italian sausage (mild or spicy)
1 lg. yellow onion
1 green or yellow bell pepper
1 (28 oz.) can Italian style plum tomatoes
1 lb. French green beans
1/3 c. water (if needed)
2-3 tbsp. tomato paste (optional)
1 (12-16 oz.) pkg. Fettuccine or wide noodles

Cut sausage into slices about 1/2 inch thick. Slice onion into rings. Place sausage and onions in a large heavy bottomed skillet, cook over medium heat, stirring with a wooden spoon until sausage is browned and onions are tender. Drain off fat from pan and discard fat. Slice bell pepper into strips 1/2 inch wide. Drain tomatoes, reserve liquid. Cut tomatoes into small pieces. Add peppers, tomatoes and about 1/2 of tomato liquid to the pan. Cook uncovered over medium heat about 5 minutes or until thickens. Snap beans into 2 or 3 inch lengths add to pan and combine with rest of ingredients. Cook noodles according to directions. When pasta is done, drain. Pour pasta into large bowl. Pour sauce over noodles and toss with fork. Serve at once.
