STUFFED BAKED POTATOES 
6 long white potatoes, baked
3 oz. cream cheese
1 tsp. salt
1/4 c. milk or half and half
2 tbsp. butter
1 tsp. grated onion
2 eggs

Scoop out potatoes right after they're baked. (Cut in half lengthwise.) Add all ingredients and blend in mixer. Return this mixture to the potato shells. Store in refrigerator. Bake just before serving. Temperature 400 degrees for 30 minutes. Sprinkle with paprika before putting in oven. These also freeze well. Add extra baking time if frozen.
