STUFFED BAKED POTATOES 
1/2 lb. hamburger
4 baking potatoes
2 tbsp. chopped onion (or diced green olives or chives)
2 tbsp. butter
1 tsp. salt
1/2 c. shredded cheese

Scrub potatoes and bake in a very hot oven (450 degrees) for 45-55 minutes or until tender when pierced with a fork. Pan-fry hamburger and onion in a skillet. Cut a slice from the top of each potato and scoop out inside. Mash thoroughly. Add the meat, butter and onion mixture to the potatoes and whip until light and fluffy. Pile lightly into potato shells and top each with shredded cheese. Return to very hot oven to reheat and melt cheese.
