TUNA STUFFED BAKED POTATOES 
2-3 baking potatoes
1 can tuna fish
1/2 onion, finely chopped
2 heaping tbsp. mayonnaise
1/4 tsp. nutmeg
Salt and pepper to taste
Parsley

Scrub skin of potatoes. Bake in oven until done. Remove from oven and cut with knife halfway through baked potato. With teaspoon, remove most of the pulp and place in bowl. Mash potato coarsely with fork. Do not whip potato pulp. Add rest of ingredients to pulp and spoon it back into the potato shells, heaping round at top. Bake in oven for 10-15 minutes. Remove and add a sprinkle of paprika and top with parsley.
