BAKED STUFFED POTATOES 
8 potatoes, baked
8 oz. cream cheese
1/2 c. butter
1/4 tsp. pepper
2 c. shredded carrots
8 oz. stick Cheddar cheese
1/2 c. green onions
1 lb. bacon, fried, drained, crumbled

Cut baked potatoes in half - scoop out center. Combine potatoes, cream cheese, butter and spices, mix, then stir in remaining ingredients. Pile into shell and bake at 400 degrees for 30-45 minutes.
