CHEESE STUFFED BAKED POTATOES 
4 lg. baking potatoes
1 1/3 c. low-fat cottage cheese
2/3 c. grated Parmesan cheese
2/3 c. finely chopped green onions
1/3 tsp. pepper
2/3 tsp. garlic powder
1/4 c. milk
Dash of paprika

Preheat oven to 375 degrees. Scrub potatoes and bake for about 1 hour and remove from oven. Cut very thin lengthwise slice from potatoes. Scoop out pulp of potato and mash in a large mixing bowl. Add remainder of ingredients (except paprika) and mix thoroughly. Scoop mixture back into potato shells. Dust with paprika and bake at 375 degrees for 25 minutes. Serves 4.
