4 c. mashed sweet potatoes (about 3 1/2 lb. raw or 2 cans 1 lb. 2 oz., drained) 3 tbsp. sugar 4 tbsp. butter 1/2 tbsp. salt 1/4 c. apricot or peach brandy (brandy may be replaced with 1/4 c. light cream 1 tbsp. grated orange rind Marshmallows Put ingredients into 2 quart mixing bowl and mix well. Place in casserole; sprinkle with orange rind and top with marshmallows. Bake at 350 degrees until marshmallows have browned (25-30 minutes). |
