TURKEY TORTILLA CASSEROLE 
butter
3 cloves garlic, chopped
1 lg. onion, chopped
1 1/2 lb. ground turkey
1 qt. canned tomatoes
1/8 c. vinegar
1/8 c. brown sugar
1 tbsp. oregano
3 dashes hot sauce
2 tbsp. chili powder
1 tsp. salt
2 green peppers, chopped
2 ribs celery, chopped
1/2 lb. nacho cheese tortilla chips
1/2 lb. cheddar cheese

Saute onion and garlic in butter until glossy. Add ground turkey until cooked through. In large pan put tomatoes, vinegar, brown sugar, oregano, hot sauce, chili powder and salt. Add meat mixture and simmer for 20 to 30 minutes, on low heat. In a 13 x 9 inch baking pan layer the green peppers and celery. Add the tomato meat mixture. This can be refrigerated overnight at this point or baked immediately. Just before placing in oven mix in nacho cheese chips. Sprinkle top with cheese. Bake at 375 degrees for 30 minutes or until very hot. NOTE: if you want the nacho chips to be mushy they can be added the night before you bake it.
