TWENTY-FIVE GARNISHES FOR THE
BASIC HAMBURGER
 
After you have made the hamburgers according to the basic recipe, and put them on the buttered buns, prepare any of the following garnishes and spread them on the hamburgers while the meat is still hot:

1. Soften 4 tablespoons of butter and mix with 4 tablespoons of Heinz 57 Sauce or A-1 Steak Sauce.

2. Chop 4 sweet-sour pickles very fine. Add 4 tablespoons mayonnaise and beat together.

3. Mix together very thoroughly: 2 tomatoes, chopped very fine; 1/2 teaspoon sweet basil and 3 tablespoons soft butter.

4. Mix to spreading consistency: 1 (4 ounce) package cream cheese, softened; 1/4 teaspoon thyme; 1/4 teaspoon oregano, and 1/4 teaspoon sage.

5. Mix together 4 tablespoons softened butter, 2 tablespoons grated onion and 1 tablespoon mayonnaise.

6. Mix to spreading consistency: 4 tablespoons softened butter and 4 tablespoons pine nuts, chopped very fine.

7. Mix to spreading consistency: 4 tablespoons softened butter and 4 ounces fetz (greek) cheese.

8. Mix together 1/2 cup catsup; 1/4 cup green pepper, chopped very fine and 1 pimento, chopped fine.

9. Mix to spreading consistency: 1 (4 ounce) package cream cheese, 4 tablespoons Bleu cheese and 1 tablespoon mayonnaise.

10. Mash 1 medium-sized avocado, then add to it 1 tablespoon lemon juice and a dash of Tabasco.

11. Mash 1 medium-sized avocado, then add to it 2 tablespoons lime juice, 1/2 teaspoon grated lime rind and a dash of cayenne.

12. Whip to spreading consistency: 3/4 cup Cheese Whiz, 1 tablespoon onion juice and 1 tablespoon lemon juice.

13. Whip together to spreading consistency: 3/4 cup Cheese Whiz and 3/4 cup French-fried onions, crumbled.

14. Mix together 3/4 cup Cheese Whiz and 5 strips of bacon, fried crisp, broken into small pieces.

15. Beat together: 4 tablespoons softened butter, 1 tablespoon bead molasses and 1 tablespoon soy sauce.

16. Place 1/4 inch thick slices of onions on burgers when nearly done and brush three or four times with the following, all mixed together: 1 tablespoon sugar, 1 teaspoon salt, 1 teaspoon mustard, 1/2 teaspoon celery seed, 1/2 cup olive oil and juice of 1 large lemon.

17. Put in a saucepan and let simmer for 15 minutes: 1 cup pitted tart pie cherries, juice of 1 lemon, 1 tablespoon sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon ground cloves.

18. Put in a jar: 1 cup evaporated milk, 1/2 cup sugar, 2 tablespoons dry mustard, 2 tablespoons cornstarch, 1 teaspoon accent, 1/2 teaspoon salt and 1/4 teaspoon pepper. Shake all the ingredients together in the jar; then put them in a saucepan and cook over low heat until thick.

19. Blend together: 1/2 cup horseradish, grated; 1 cup thick sour cream; 1 teaspoon sugar; 1/2 teaspoon salt and 1/4 teaspoon pepper.

20. Melt 3/4 cup Cheese Whiz in a double boiler. Add 1 small can mushroom stems and pieces, drained and chopped fine. Stir mushrooms and cheese together well.

21. Whip together until of spreading consistency: 4 tablespoons soft butter, 1/2 teaspoon dill seed and 1/2 teaspoon celery seed.

22. Put in a fruit jar: 2 tablespoons fresh dill, chopped very fine; 1 cup water; 2 beef bouillon cubes; 1 tablespoon flour; 1/2 teaspoon cider vinegar and 1 egg yolk. Shake all the ingredients together in the jar, then put in a saucepan and cook over low heat until thickened. Add 1 tablespoon butter. Spread over burgers and serve immediately.

23. Whip together: 1/2 cup mayonnaise, 1 tablespoon lemon juice and 1 tablespoon capers, crushed.

24. Mix together: 1 cup mushrooms (fresh ones, preferably), chopped very fine; 1/4 cup Heinz 57 Sauce and 1/4 cup mayonnaise.

25. Mix well 1 small can deviled ham; 3/4 cup Virginia peanuts, chopped fine; 1/4 cup sweet pickle relish and 3/4 cup mayonnaise.
