CHICKEN HAWAIIAN WITH FRENCH
FRIES
 
1 (3 lb.) frying chicken, cut up
1/4 c. butter
1 c. pineapple chunks
1/2 c. thinly sliced onions
2 tsp. salt
1/4 tsp. garlic
2 tbsp. vinegar
2 tbsp. soy sauce
1/4 c. light brown sugar
2 tbsp. cornstarch
1/2 tsp. ginger
1 pkg. French fries
1 lg. green pepper, cut in strips

Brown chicken in butter in large, covered, fry pan. Drain pineapple chunks (save juice). Add onion, 1/4 cup pineapple juice, 1 teaspoon salt, and garlic salt to chicken. Cook, covered, until tender (20-30 minutes). Combine remaining pineapple juice, brown sugar, cornstarch, and ginger. Mix until smooth. Pour over chicken and cook until thick and clear. Add French fries. Sprinkle with salt and stir gently. Add green pepper and pineapple chunks. Heat through. Serves 6.
