CHICKEN ON A BED OF PEPPERS 
1 frying chicken, cut up (or 4 lg. breasts)
1 lg. red onion, sliced
4 tbsp. tomato paste
4 tbsp. paprika
1 each red, yellow & green bell peppers (seeded & cut into 1/2" wide pieces)
4 cloves garlic, chopped
1/2 c. dry white wine

Place chicken in 3 quart casserole dish. Mix peppers, onion, garlic, tomato paste, wine and paprika; pour over chicken. Cover securely with plastic wrap and cook in microwave on high for 25-30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
