GRANDPA'S 2 STORY LEMON PIE 
1 (8 oz.) container whipped topping
1 lg. pkg. (6 serving) Jello lemon pudding & pie filling
1/2 c. sugar
1/4 c. water
1 egg
1 (9") baked pie shell

Mix together pudding mix, sugar, water and add in medium pot. Stir in 2 cups water; cook and stir to full boil over medium heat. Cool 5 minutes, stirring twice. Set aside 1 cup filling; cover surface of filling with waxed paper; chill. Pour rest of filling into cooled, baked 9" pie shell; chill.

Beat the 1 cup filling until smooth and fluffy. Blend in 1 1/2 cups whipped topping; spread over lemon filling in pie shell. Spread rest of whipped topping over top. Chill 3 hours. 6 to 8 servings.

This is was one of the pies my mother made for Thanksgiving when I was growing up. Since I haven't had it in years, I recently asked her to make it, but she didn't have it - recently threw out some recipes she thought would never make again. OUCH. She didn't tell me, and when I had the lemon pie she brought she told me it was a recipe her and my dad found on the internet. CUT TO THE CASE - I was determined to find this recipe (took quite a while) but found it on Ebay of all places! There was a Jell-o ad from 1966 being auctioned - it is "Dream Whip Jell-o Two Story Lemon Pie". Then much later I found this page.

Needless to say, this is such a good recipe and it is different from those using cream cheese or sweetened condensed milk, or mixing lemon jello with cool whip. Though it is not the season for lemon pies, I will make this for Christmas and surprise everyone.
