LEMON PIE | |
1 box My-T-Fine pudding and pie filling 3/4 c. sugar 1/4 c. water 3 egg yolks; separated from white, reserve whites 2 1/2 c. water 2 tbsp. lemon juice 1 tbsp. butter Meringue 3 egg whites 1/4 tsp. cream of tartar 1/4 c. sugar 9 inch baked pie shell Mix contents of 1 box with 3/4 cups sugar and 1/4 cup water. Stir in 3 egg yolks, slightly beaten and 2 1/2 cups water, 2 tablespoons lemon juice and 1 tablespoon butter. Cook and stir over low - medium heat until mixture comes to a full bubbling boil. Cook 5 minutes, stirring twice. Pour into 9 inch baked pie shell. Use directions on pudding - pie filling box for meringue or beat 3 egg whites and 1/4 teaspoon cream of tartar until foamy. Slowly add 1/4 cup sugar, beating until stiff. Spread on pie. Brown pie at 350 degrees for 8 to 10 minutes. Chill. |
