CHICKEN YAKATORI | |
1 lb. boneless & skinless chicken breasts 1 sm. bunch scallions Garlic 1/4 c. soy sauce 2 tbsp. lemon juice 2 tbsp. vegetable oil 1 tsp. sugar 1/2 tsp. salt 1/4 tsp. ground pepper 1/4 tsp. ground ginger Cut chicken into cubes, cut enough scallions to make 1/4 cup; save remaining scallions. Combine 1/4 cup scallions with remaining ingredients in a jar, shake well and pour over chicken. Marinate in refrigerator 3 to 4 hours, stirring occasionally. Thread chicken cubes on skewers, alternately with remaining scallions, mushrooms, fresh pineapple or whatever sounds good to you. Cook on outdoor grill. |
