CHICKEN WON TON SOUP 
3 c. chicken broth
1 tbsp. soy sauce
1 tsp. lemon juice
Dash ground ginger
1 (10 oz.) pkg. frozen mixed vegetables
2 egg roll skins or 8 won ton skins, cut into thin strips
1 c. cubed, cooked chicken or 1 (5 oz.) can white boned chicken, drained

In a large saucepan combine the chicken broth, soy sauce, lemon juice and ginger. Bring to boiling. Add the vegetables. Reduce heat. Cover and simmer for 5 minutes. Add the chicken. Add egg roll skins or won ton skins and cover and simmer for 5 minutes or until vegetables are tender. Makes 3 servings.
