MANDARIN ORANGE LETTUCE SALAD 
1/2 c. sliced almonds
3 tbsp. sugar

In small pan over medium heat, mix the above together. Stir constantly until light brown. Remove from heat and continue stirring to prevent sticking together. Refrigerate when cool.

Shred 1/2 head iceberg lettuce, 1/2 head Romaine lettuce (or leaf lettuce). Add 1 cup chopped celery, 2 whole green onions, chopped. Mix together. Cover with plastic wrap and refrigerate.

When ready to serve, toss salad with almonds and sugar and 1 (11 oz.) can mandarin oranges, drained. Pour dressing over just before serving.

DRESSING:

1/2 tsp. salt
1/4 c. oil
1 tbsp. parsley
2 tbsp. sugar
2 tbsp. vinegar
2 dashes Tabasco sauce (optional)
Dash of pepper

Mix together and store in refrigerator until ready to use.
