CARROTS AND GRAPES 
2 lbs. carrots
1/2 c. orange juice
1/3 c. olive oil
1/2 tsp. salt
Dash ginger
1 c. seedless green grapes

Cut carrots into 1" diagonal slices. Cook carrots and next 5 ingredients until fork tender, about 15 minutes. Add halved grapes to carrots and cook 5 more minutes. Drain and sprinkle with parsley.
