MICROWAVE PICKLES 
1 large cucumber sliced 1/4 inch thick (2 c.)
1 medium onion, sliced thin (3/4 c.)
1 c. granulated sugar
1/2 c. white vinegar
1 tsp. salt
1/2 tsp. mustard seeds
1/4 tsp. turmeric

Mix and put in 2 qt. casserole covered. Microwave on high 7 - 8 minutes stirring twice until cucumbers are crisp and tender and onion is translucent. Ladle into glass jar (rinsed with hot water).

Cover, cool and refrigerate.

Makes 2 1/2 c.

Since microwave ovens vary in power, you may need to adjust your cooking time.
