CURRY RICE SALAD 
1 pkg. chicken flavored rice (Rice-a-Roni)
1 jar artichoke hearts, drained
1 sm. jar sliced pimento
1 tsp. curry powder
Salt & pepper to taste
Mayonnaise to desired consistency

Cook rice according to package directions. Allow to cool. Add cut up artichokes, pimento and seasonings to taste. Lightly toss with mayonnaise to desired consistency. Chill for 24 hours before serving. Serves 6.
