WHOLE WHEAT ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
1 1/4 c. chopped nuts
2 tsp. vanilla
1 1/2 c. whole wheat flour
1 1/2 c. white flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 c. grated zucchini squash

Beat eggs, add sugar gradually. Beat continuously until mixture is thick and lemon colored. Add oil gradually and continue beating until all is well mixed. Sift flour, salt, soda, eggs, and oil mixture. Fold in 1 1/4 cups chopped nuts and 2 cups grated zucchini. Pour into 2 well-greased and floured loaf pans (9 x 5 x 3 inches). Bake in 350 degree oven for 1 hour or until a toothpick inserted comes out clean.

NOTE: This can be made with all-white flour and is delicious. Sift all flour before measuring. Serve warm. May be frozen.
