WHOLE WHEAT ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
3 c. whole wheat flour
1 tsp. salt
1 c. quick cooking oatmeal
1 tsp. baking soda
1/4 tsp. baking powder
1 c. chopped walnuts
1 tsp. vanilla
2 tsp. cinnamon

Mix liquids; add zucchini; then add all dry ingredients. Pour into 4 small baby loaf pans or two large loaf pans, greased. Bake at 325 degrees for 1-1 1/2 hours. Do not overbake. Bake baby loaf pans only about 50 minutes.
