WHOLE WHEAT ZUCCHINI BREAD 
3 eggs
2 tsp. vanilla
1 c. whole wheat flour
1 c. vegetable oil
1 tsp. baking soda
3 tsp. ground cinnamon
2 c. sugar
2 c. grated unpeeled raw zucchini
1 tsp. salt
2 c. flour
1/4 tsp. baking powder
1 c. chopped filberts or walnuts (optional)

Beat the eggs until light and foamy. Add the sugar, oil, zucchini, and vanilla, and mix lightly but well. Combine the flour, salt, soda, baking powder, and cinnamon. Add to the egg-zucchini mixture. Stir until well blended. Add nuts and pour into 2 (9x5x3 inch) loaf pans. Bake in a preheated 350 degree oven for 1 hour. Cool on a rack. 2 loaves.
