ZUCCHINI BREAD 
3 c. whole wheat flour
3 c. grated zucchini
1 1/4 c. oat bran
4 1/2 tsp. baking powder
1 tsp. nutmeg
2 tsp. cinnamon
1 c. chopped nuts
4 egg whites
1 3/4 c. applesauce
2 tsp. vanilla extract

Preheat oven to 350 degrees. Mix together the flour, oat bran, baking powder, nutmeg, cinnamon, and nuts. In another bowl, mix the egg whites, applesauce, and vanilla extract. Stir in the grated zucchini. Add the flour mixture to the zucchini mixture; gradually stirring until blended. Turn the batter into 2 (8 1/2 x 4 1/2 inch) loaf pans and bake 1 hour.
