ZUCCHINI BREAD 
3 eggs, slightly beaten
3/4 c. white sugar
3/4 c. brown sugar
1 c. liquid oil (vegetable)
2 c. grated zucchini, washed but not peeled
2 tsp. vanilla
1 1/2 c. whole wheat flour
1 c. white flour
2 tsp. baking soda
1/2 tsp. salt (optional)
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1/4 tsp. cloves
1 1/2 c. chopped pecans
1/4 c. wheat germ

Beat eggs and sugars together and add liquid oil, then mix in other ingredients. Bake in two greased and floured bread pans at 350 degrees for 40 to 50 minutes. Note: 1 small can crushed, DRAINED pineapple can also be added.
