ZUCCHINI BREAD PUDDING 
2 c. zucchini milk
1 1/2 c. cubed whole wheat bread
2 tbsp. butter
1/4 c. honey
1/4 tsp. salt
2 eggs, lightly beaten
1 tsp. vanilla
1/2 tsp. ground cinnamon
1/2 c. raisins

Heat oven to 350 degrees. Bring milk to boil and pour over bread cubes with butter. Mix eggs, salt and honey and add. Then add vanilla, cinnamon and raisins. Pour into greased 1 quart baking dish. Set dish in shallow pan of hot water and bake 45 minutes or until knife inserted comes out clean.
