SHARA'S FRITO-CHILI-DOG CASSEROLE | |
1 lb ground turkey breast 4 hot dogs, cut into 1" pieces 1 onion, chopped 1 (1.25 oz pkg) dry chili seasoning mix 1 (14-1/2 oz can) diced tomatoes 1 (8 oz can) tomato sauce 1 (8.5 oz pkg) corn muffin mix 1/3 cup 2% milk 1 egg 3/4 cup reduced-fat shredded cheddar cheese 1 1/2 cups Frito corn chips Preheat oven to 400°F. In a large skillet over medium-high heat, add ground turkey, hot dogs, onion, and seasoning mix. Cook, stirring until ground turkey is browned and onion is tender. Stir in diced tomatoes with juices, tomato sauce and 1/2 cup water. Transfer to a 2-quart baking dish. In a bowl, combine muffin mix, milk, egg, and 1/4 cup cheese. Spread over meat mix, leaving a 2-inch border. Sprinkle with corn chips and remaining cheese. Bake until bubbly, 20-25 minutes. Submitted by: Sherry Monfils |
