WHEAT GERM ZUCCHINI NUT BREAD | |
3 eggs 1 c. salad oil 1 c. granulated sugar 1 c. brown sugar, firmly packed 3 tsp. maple flavoring 2 c. coarsely shredded zucchini 2 1/2 c. unsifted flour 1/2 c. wheat germ 1/2 tsp. baking powder 2 tsp. each soda and salt 1 c. finely chopped walnuts 1/3 c. sesame seeds With mixer, beat eggs to blend. Add oil, sugars, and maple flavoring. Beat until mixture is thick and foamy. Using spoon, stir in zucchini. Combine flour, wheat germ, soda, salt, baking powder, and walnuts. Stir gently into zucchini mixture just until blended. Divide pans. Sprinkle sesame seeds evenly over tops of each. Bake in a 350 degree oven for 1 hour or until wooden pick comes out clean. Cool in pan 10 minutes. Turn out on wire racks. Cool thoroughly. Makes 2 loaves. |
