WHEAT GERM ZUCCHINI BREAD | |
3 eggs 1 c. salad oil 1 c. white sugar 1 c. brown sugar 1 tbsp. maple flavoring 2 c. coarsely shredded zucchini 2 1/2 c. flour 1/2 c. toasted wheat germ 2 tsp. baking soda 2 tsp. salt 1/2 tsp. baking powder 1 c. chopped walnuts 1/3 c. sesame seeds Beat eggs, add oil, sugars and maple flavoring. Beat until thick and foamy. Stir in zucchini. Combine flour, wheat germ, soda, salt, baking powder and walnuts. Stir gently into zucchini mix. Divide into 2 greased and floured 5 x 9 inch loaf pans. Sprinkle sesame seeds evenly over top. Bake at 350 degrees for 1 hour. Yield: 2 loaves. NOTE: Better if stored overnight before eating. |
