WHOLE WHEAT ZUCCHINI BREAD 
2 1/2 c. plus 2 tbsp. whole wheat flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
3 eggs, separated
1 c. chopped nuts
2 c. sugar
1 c. oil
2 c. grated, peeled raw zucchini
2 tsp. vanilla

Combine flour, salt, baking soda, baking powder and cinnamon. Beat egg yolks well, until very light. Stir in sugar, oil, zucchini and vanilla. Add the dry ingredients, then the nuts. Beat egg whites until stiff, then fold into mixture. Pour into 2 well greased loaf pans and bake at 350 degrees for one hour.
