WHOLE WHEAT ZUCCHINI BREAD 
2 eggs
1 c. sugar
1/2 c. oil
1 tsp. fresh lemon rind
1/4 tsp. ground ginger
1/2 tsp. powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. flour
1 c. whole wheat flour
1 med. zucchini, shredded
1/2 c. nut pieces (opt.)

Mix all ingredients together except zucchini and nuts. When well mixed, add zucchini and nuts. Grease pans and fill. Bake at 350 degrees. Large loaves bake 1 hour, small loaves bake 30 minutes and mini muffins bake 17 minutes.
